Hoisin-Honey Glazed Cocktail Size Meatballs

 
 We're in the midst of the holiday season and festive parties are sure to in everyone's future. I thought these little Hoisin-Honey Glazed Cocktail Meatballs would be a perfect little bite. They are quick and easy and you can make the meatballs ahead of time and freeze them so you're ready at anytime for unexpected guests.  I love the addition of some toasted sesame seeds because they give the perfect little crunch and "nutty" flavor that compliments these sweet, savory and spicy little appetizers.  

Ingredients: 
For the meatballs:
2lbs lean ground meat **I used a combo of chicken and pork
2Tbs of ginger/garlic paste (or 1Tbs of each separately grated)
2Tbs of Soy Sauce
1 Tbs of Chinese Rice Wine (or sherry)
1 tsp of Sesame Oil
 Red Chili Flakes to taste
 Black Pepper to taste
minced green onions (scallions)

For the Glaze:
1/4 cup of Hoisin Sauce
1/8 of  a cup of honey
2 Tbs soy sauce

 Garnish:
toasted Sesame Seeds (optional)

 Directions:
 Mix all the meatball ingredients together and make into walnut size meatballs.






In a frying pan with some canola oik, brown meatballs until cooked through on medium heat.






Add your glaze/sauce and cook the meatballs for a few minutes. 







Toast your sesame seeds in a dry pan until fragrant and sprinkle over the meatballs.  Place a toothpick into each meatball and serve hot.  Enjoy.







Serve hot and enjoy.  Makes enough for a party. :)

Savory Asian Egg Rolls

 I enjoy getting Chinese take out when I am in no mood to cook, but the one thing I never order are egg rolls.  I find by the time they get home the egg rolls are soggy, oily and usually too bland for my taste.  So I wanted to find a good egg roll recipe and I came across this food blog called Steamy Kitchen, by Jaden Hair.  Her blog is amazing and full of gorgeous Asian recipes.  I found her Mother's Famous Chinese Rolls and I knew I had to give them a try.  I did make a few changes, but I was so very pleased at the end result.  These were some amazing egg rolls.  

You will need:
One bunch green onions chopped
2 carrots finely grated
2 cups shredded cabbage ** see note below
1 tbs of grated ginger
2 cloves of garlic minced

** here is a quick tip for the cabbage: get help from the store by buying a bag of pre-cut coleslaw

 
 Egg Roll wrappers. This was the only kind of egg roll wrappers available in my local grocery store.

Next time I will go to the Asian Market and get the frozen wrappers that are thinner and crispier that Jaden recommends.  But these are still good in my opinion.


One pound of lean ground pork.  You will need to marinated the pork for 10 minutes in:
1 Tbs of soy sauce
1 tsp cornstarch
1/4 tsp sugar
black pepper

 Heat a wok or large saute pan over high heat. In one Tbs of oil saute' pork until no longer pink

For the filling you will need to prepare the following sauce:

1Tbs Chinese rice wine
1 tsp rice wine vinegar
1/4 tsp sugar
1/2 tsp salt
1 Tbs soy sauce
1 tsp sesame oil
pepper



 Add vegetables and sauce. Stir fry for a few minutes until vegetables are tender.



You must cool the filling before proceeding to make the egg rolls. A great tip Jaden gives is to put it on a baking sheet and spread it out then tilted the cookie sheet so if there was any liquid in the filling it would drain out. I luckily had no liquid in my filling. But if you do, discard the liquid because you don't want liquid to make the egg rolls soggy.

Step one: fill wrapper with one teaspoon of filling.

Step 2:  fold corner over and roll tightly












Step 3: Fold sides over  


Step 4:  Roll tightly and seal the edge with water.
Have all egg rolls done before frying.  Do not lay on top of each other so they don't stick together.


Fry each egg roll until golden brown. You want your oil hot (about 350 degrees), but not scorching hot.

Serve and Enjoy.

Peanut Butter and Chickpea Hummus

I enjoying my day reading Nigella Lawon's cookbook, Nigella Kitchen, when I came across a recipe for peanut butter hummus.  My mind started to whirl... peanut butter instead of tahini paste.  Why not!  I love the recipe, but I did make some changes (hopefully for the better... sorry Nigella).  I luckily had all the ingredients right in my fridge and pantry and made it right then and there.  I was very happy with the result.  Next time you're in a fix for some hummus and don't have any tahini around... think peanut butter.

Ingredients:
2 (15oz) cans of chickpeas drained
1/2 cup of Greek yogurt
1/3 cup of creamy peanut butter
2 tsp of cumin powder
2 tsp of sesame oil
1 tsp of paprika
2 cloves of grated garlic
juice of one lemon (about 3 Tbs)
1 spicy chili (seeded)
salt to taste
chopped peanuts (optional garnish)
1Tbs of olive oil







Directions:
Put all in the ingredients in a food processor and blend until it becomes a pureed consistency. If it's took think add more olive oil. Serve with toasted pita chips and enjoy.

BLT Pizza -Bacon Lettuce and Tomato Pizza

I was having a dinner time dilemma.  I had two hungry/tired kids, one grumpy husband and I was rushing to get dinner on the table after coming home from piano lessons.  I had nothing really planned so I decided to just wing it and make this BLT Pizza.  It came together surprisingly fast and I know I had it done before I could order pizza.  What a fun dinner.  My son is not a fan of tomatoes (except in sauce form) so I was able to even accommodate him by just making him a bacon and lettuce pizza.  One dish, 4 happy people and only 1 baking tray and cutting board to really wash up.  Yes, now that's my kind of dinner.

 Ingredients:
1 bunch of romaine lettuce shredded
1 pint of grape tomatoes sliced
4oz Philadelphia Chive & Onion Cream Cheese (see note)
Pizza base (see note)
8-10 slices of bacon crumbled
Salt and Pepper to taste


Notes:  Chive flavored cream cheese is a key ingredient giving this pizza some extra pizazz.  If you cannot find this, you can try to make your own by mixing plain cream cheese with 1/2 tsp of onion powder and 2Tbs of minced fresh chives.  I also like the texture of the "whipped cream cheese because it spreads much easier.

Notes:  You can use any pita, naan, boboli style pizza crust or afghan bread for your pizza crust.  If you decide to use pizza dough, pre-bake your pizza crust before making this pizza. 

Directions:

You will need to first get your bacon cooked.  The easiest way to make bacon is to bake it in the oven.  You will get perfectly crispy bacon and you don't have to do anything but let it bake.  Preheat your oven to 400 degrees.  You will need a baking tray and some cooling racks placed on top of it or you can use your broiler pan that is slotted with a drip pan.  Lay your bacon across the cooling racks.  Place them in the oven for 15 minutes or until the bacon is fully cooked and ready to crumble.  The bacon will be crispy, perfectly straight and all the oil will have dripped to the lower tray.  I love this method.

While your bacon is baking, you can also crisp up your pizza base.  I used this great Afghan bread that makes perfect pizza crust.  But any of your favorite pizza bases that are pre-baked and heated are perfectly fine.   Once the pizza base is heated (but not too hot) apply the chive and onion cream cheese all over the base. 
 


Next layer the shredded romaine lettuce, sliced grape tomatoes, salt and pepper and bacon.
 
Enjoy.

Savory Sri Lankan Rolls

These savory Sri Lankan Rolls are always a favorite at parties.  They are our version of the Chinese Egg Roll.  But instead of using the egg-roll wrapper, a thin crepe like pancake is used to hold the filling and then breaded and deep fried.  The filling is always savory, but can be varied from meat to a vegetarian filling.  I made a combination of ground chicken and vegetable filling. 

The Filling:
Ingredients: 
1lb of ground meat  (see note)
2 carrots finely grated (optional)
4 boiled potatoes coarsely mashed
1 medium onion chopped
2 green chilies seeded and chopped
1-2 Tbs of grated fresh garlic
2 inches of fresh ginger grated
10-15 curry leaves (torn)
1 small stick of cinnamon
1 Tbs of finely minced fresh mint leaves
2-4 Tbs of soy sauce
1 Tbs of vinegar
1 Tbs of curry powder
1/2 tsp of turmeric
1/2 tsp of chili flakes or powder
salt and pepper to taste (I used a lot of pepper)
juice of half a lime

Note:  you can use same flavorings for any ground meat (beef, pork, lamb) or with canned tuna/mackerel.  If you decide to make vegetarian rolls, add more potato and carrots.  You can also use peas, cauliflower etc... 

Directions.   Prior to making your filling boil your potatoes and coarsely mash them. Then saute your ground meat with the garlic, ginger curry leaves, cinnamon stick and carrots.  Once the meat is cooked, add powdered spices and saute for another minute. Then add your soy sauce, vinegar, mint leaves and salt and pepper to taste.  Add the lime juice as the final step and make sure you taste you mixture for seasoning.  Allow the filling to cool down before making the pancakes.

The Pancake:
2 cups cold water
1 cup milk
1 tsp salt
1 egg
2 cups of all purpose flour

Beat all ingredients together until it forms a thin pancake batter.

Heat an 8 inch non-stick frying pan and grease it with a little oil between each pancake. Pour a ladle full of the batter into the pan and swirl it around gently until it forms a thin pancake.  Cook until set without browning.  There is no need to flip the pancake. 





Place the cooked pancake on a plate and add about 2 Tbs of filling.  Proceed to roll the pancake like an egg-roll.
 


You will need to roll each pancake immediately so the warm pancake adheres together from it's own heat.  If you allow the pancake to cool, it will fall apart and not stay rolled. This is great if two people are making this dish so one can cook the pancake and the other fill and roll.  But if you are working alone, roll the prepared pancake with the filling while a new pancake is cooking on the stove and repeat. You can cook the pancakes on medium heat so it gives you some additional time to fill the pancake.

Leave about 1/2 a cup of batter to use as a coating for the breadcrumbs to stick to the rolls.  Simply dip each roll gently in the batter and get it on all sides.  Then coat with some plain breadcrumbs.



Get all your rolls breaded and ready to fry.

Fry in hot canola oil in a deep skillet until golden brown (about 1 minute or less depending on how hot your oil is).  Note: You will want enough oil in the pan so the roll is submerged in the oil.  Allow to drain on paper towels.



You can enjoy these warm or at room temperature. If you are making them as a hors d'oeuvre you can cut them in half.  These do freeze well and you can reheat them in an oven until heated through. Enjoy.
